Vegan Duck Sushi Bowl

A very quick, low syn lunch recipe

Ingredients
  

  • 1 portion veetee sticky rice 0.5 syn
  • 1 pack planted hoisin duck 1 syn
  • 1/4 cucumber, sliced
  • 1 spring onion
  • 1 tbsp hoisin sauce 1.5 syn
  • 1 tsp sesame seeds (optional)
  • 1 large handful spinach
  • 2 garlic cloves, crushed
  • 1 tsp gochugaru (chilli flakes)

Method
 

  1. Wash, chop and prep all your salad ingredients
  2. Cook the vegan duck with frylight
  3. Stir fry the garlic on a low heat and add the washed spinach
  4. Sprinkle with gochugaru (chilli flakes) until wilted
  5. Microwave the veetee rice according to packet instructions
  6. Assemble into a bowl. Add a drizzle of light soya sauce to the rice
  7. Add the hoisin sauce over the vegan duck
  8. Sprinkle with sesame seeds and/or chilli flakes to taste (optional)
